FROSTED LEMON POPPY SEED BARS

Healthy raw no bake dessert. Gluten, sugar and white flour free. Crunchy, sweet, easy to make and filled with lemon zest. Perfect for the whole family.

Ingredients

  • Base:
  • 1 cup almonds
  • ¾ cup cashews
  • ½ cup raisins (soaked 30 minutes and drained)
  • ¼ cup poppy seeds
  • zest and juice of one lemon
  • Frosting:
  • 1 cup cashews
  • ¼ cup honey
  • ½ cup coconut oil (warmed until liquid)
  • zest and juice of one lemon
  • water as needed

Instructions

    Base:
  1. Place almonds, cashews and raisins into a food processor and blend until well combined into a dough.
  2. Lastly add poppy seeds,lemon zest and juice and pulse until just combined.
  3. Press into the base of a small dish or pan.
  4. Frosting:
  5. Blend all ingredients adding a little water a tablespoon at a time until mixture is smooth and creamy.
  6. Spread over base and decorate with extra lemon zest and poppy seeds.
  7. Refrigerate until firm, at least 2 hours.
